I have built a game as an 'ios xcode project', and have put it on my mac, and opened it in xcode fine without any errors. When I try test with the ios simulator,is just show a black screen for the simulator. I tried with another game and same issue occurs.

What am I doing wrong here?

There may be a better solution, but in my experience just wait and mess around with the simulator until it starts, or press the home button (on the "iPhone) and click on the App icon again. That usually does the trick for me.

It takes a little while to start. Start it then go make a cup of tea or something.

You should test on the actual device. It starts almost instantly and runs a whole lot better. Not to mention you get to test it on it's intended platform.

Doesn't that require you to pay for the Apple Developer subscription thing?

That's correct - You must be a registered developer with apple before you can do this. Also the blank screen is pretty normal in my experience with the emulator. Just give it a minute. Usually takes about 20 seconds for me.
