But just the other week I got myself a widescreen monitor and it still seemed nice (It was like fullscreen but with letterbox on the left and right side of the screen)
Just until the other day when everything was resized to fit the screen, It all looks so wide and ugly and I have no idéa what caused it.
I looked around here on the forums but could'nt find anything.
So my question is if there is a way to bring back the letterbox ?

You probably hit auto adjust on your monitor (or the monitor auto adjusted itself).
I don't believe there is any way to combat your problem without manual input if you are using resize to fit screen. To be quite honest running the game in its native resolution is usually much better looking and much faster. 640x480 change resolution with resize unticked.
If you are looking for the manual fix then Play with your monitor settings (the buttons on the front/sides - not the computer display settings) and set your aspect ratio to 4:3.
