While I was making the Demo Version for my game, I saved over the original project without thinking (since I was basically removing un-needed content from the full game for the Demo Version). This means that I won't be able to finish the game unless I recreate significant amounts of my work (my last seperately-saved versions were for a one-level OUYA experiment and V.035 w/ no final stage or increased resolution).

Is there any possible way to either retrieve past saves of an MMF2 project in an emergency, or convert a Windows .EXE made using MMF2 to a MMF2 project?

Have you checked the backup file yet?
MMF2 automatically saves, by default, a single backup file periodically. If this happened in a short timespan, and you didn't spend too much time mucking around in your messed-up .mfa file, you MIGHT be able to find your old project in the same folder, with a .001 extension.

There might not be a high chance that it will work, but it's probably the first thing you should check.

Sorry, the .001 file for my Bigger Riggers project seems to be for V0.35 (I had already finished V0.9 of Bigger Riggers).

I think this is because I had originally replaced the messed up .mfa file with the .mfa file for V0.35 of Bigger Riggers. I was originally thinking of manually re-adding the tracks and other features not yet implemented in V0.35 to replace my lost V0.9 project, but there was just too much missing in V0.35. And now it's too late to try and recover the project that way.

However, I sent a PM to Mathias on the ClickTeam forums, asking if he could possibly try to decompile the .exe file I have for V0.9 of Bigger Riggers into a .mfa file. That way, I would only have to add a couple small things in order to get back on track.

P.S. When I typed "V.035" in the original post, I meant "V0.35".

If you are running Windows 7 and have system Protection turned on then you may be in luck.

Right click on the MFA and choose properties and then look for Previous versions. It may have been backed up by Windows during a system restore point

Mathias can reverse exe into mfa's so you're good. Hopefully he'll help you out.
