ok this is the first boss to my new game "billys awesome fruit crazy quest" (name in progress) its a giant plant of some sort that can summon vines and spit baby plant things at you and you have to kill it

simplest way is to use more washed out colors in the background and brighter more contrasting colors in the foreground

Nice job. I am getting a real Super Mario World vibe here, which isn't a bad thing. Maybe that's what you had in mind when you created this? You might want to go and google some SMW screenshots/background and study what they did. I don't mean rip or edit, I mean really try to study.

I understand it's a watermelon stage, but you normally want to avoid having the platform/ground the same as the background. One idea is to use dirt, which I think SMW does. Try that (with ripping SMW's dirt) and see how that turns out.

Those are strawberry blocks right? Maybe you can try to make them appear to be just strawberries, but have the same collision as if they were blocks? Just a thought. Keep it up.
