I would like to use some Traditional Chinese text for strings in my game (it would add authenticity to it, as when you mouseover the unit on the field, it could display the "English" name and the Chinese name as well). I can't get Text Blitter to properly generate a character map regardless of which font or script I use. I really don't want to have to make a character map by hand for over 200 characters, either...

Yup. I figured out a workaround by making a second character map that uses the characters in place of plain old ASCII.
