Anyways, imagine that I'm playing a game on my PS3, and I want to record what it is that is going on on screen. (Did that sentence tear your soul in two, reading those words repeating so closely to each other?) If I want to do a video review of said game, what would be the best way to record a gameplay session?

Well if you don't mind playing in standard definition, you could plug the PS3 into a dvd recorder.

If you want HD recording, you could use something like this, http://www.hauppauge.com/site/products/data_hdpvr.html but you'll need either component cable or a HDCP stripper (because the PS3 uses HDCP all the time, even when just playing a game)
